Thanks for checking on me, Danny boy!

Been busy. I finally got a freezer batch of pie dough and pizza dough made last weekend. Back in business!  I made a huge batch of pumpkin pie a few weeks ago, turned out swell! Today, (I think hearing from you inspired me) I made a quick batch of IDY straight dough baguettes. Dare I say, my best looking to date!

I baked all four in the oven at the same time (never again) with no safety net drip pan. Don't you know I also spilled some filling in the oven! Long story short, The apartment filled with smoke. My bride was flipping out, worried the African grey parrot, (Baily) was going to die. I took the pies out 10 minutes early. No worries they set up fine over night in the refrigerator. The photo is the makings of 6 716 gram pizza dough balls, having a ride in the Bosch.

Mastered I don't know about that. Additionally these were a quick, IDY, same day bake straight dough. Much easier than long ferment, wild yeast, two stage levain. Thanks just the same buddy. Sometimes stepping back to an easier method is just the ticket!
