Artisanal Breadmaking classes or courses

I’m an amateur baker who is wanting to take it to the next level. I have two young kids and live in Miami where there are no good courses but I’m willing to travel. I’m looking for a 1-2 week long intensive breadmaking course. There are plenty that come up when I search but I’m wondering if anyone knows of any that are really exceptional.

i love baking (always have) and only started getting into breadmaking 6 months ago but I love it. I’d love to get better at it and immerse myself in the craft as much as possible. So if anyone has any trusted recommendations, that would be appreciated!

thanks you

I've taken the entry level sourdough and artisan baking classes at the KAF school in Burlington, WA (west coast).  Both classes addressed technique equally, but the sourdough class went more in-depth into the nature of bread, and I felt I learned more in this course.  Maybe this was due to the instructor (fantastic!), or class-mate experience level (high), or curriculum - hard to say.  I enjoyed both classes enough to have signed up for an advanced class in sourdough this fall, and have my eye on several others.  Needless to say, we live in the area which makes travel for a 3-4 day class relatively easy - getting to Norwich, VT can be a trek for anybody whose not local.
