Must be S Italy bread week because Jarkko (Tia this week) included in this week's Bread Magazine newsletter a link to The Bread Ladies of Cerchiara, womens' flour power in action down the way from Puglia in Calabria. One of their instinctively practiced moves that struck me was how they form their  priest's cap loaves - blithely throwing one edge of a spreading proofed dough over its middle, seconds before being peeled into the wfo. Nothing molto fussy about it.
