Hello from Upstate NY
my name is Jason and I have been a chef for 22 years. I was between jobs and decided I wanted to learn to make bread. I bought some books, watched endless hours of video and began stumbling through it all. My main expertise is pizza, so making and working with dough was an easy transition for me. I have gotten good enough to now be baking bread for the restaurant I have been at most of my life. I have 4 stone deck ovens to cook in ;)
