This is another video that my wife and I put together on kneading and folding. Just a little more detail than the PSB video with some commentary. Hope you guys like it.
I like the other video better, closer views of the dough and your immediate work surface. I like the dark counter tops, they really show off the flour how little or how much is being used. The beginning of the video showing the entire kitchen is unneccesary information, too much distraction from the work going on, the bar tends to block the view. I tend to loose interest before the close ups.
The music adds a little shock effect starting off with the sound of telephone ringing, which adds a certain stress factor to the beginning that tends to soften as you start to talk. But I feel like I'm about to be interrupted during the video. I'm tempted to turn the sound off. I would like to see more on texture and stiffness of the dough before you start kneading. Strikes me as a very stiff dough that doesn't really need folding.
I felt that only in the beginning did the bench impede some of the view for me. I like the music. It adds an extra element to the video, and am wondering whos the band?
I thought that the close up especially was good and detailed. Your explanation clear and easy to understand.
Liking the darker benchtops also.
Mini O. I always fold my dough. Even if it might not need it. It has become that "extra step" to ensure my bread doesnt suck too much......:S
I too found the music to be distracting and had to turn the sound down. Then was surprised to have to turn the sound up when the speaking started; you are quite soft-spoken. Because 1/3 of the commenters liked the music (a large percentage), perhaps you could make sure that it is at the same sound level as your voice (rather than louder) and fade it out as you begin speaking.
Nice opening showing the whole kitchen, however I would have liked to go earlier to the closer view of you kneading - especially to see how much flour you scatter initially and when you stop scattering it - showing how the dough stops sticking to your hands and bench. I would also like to see the degassing just before folding - to get an idea of how many bubbles there are.

Do you do any slack dough breads? Your sticky buns? I'm always curious to see how others manage to knead slack dough.
Mark,I liked the music in the sweet roll video better, less distracting to the project. If it were me, I would use more of the guitar solo quietly in the background, nice touch. I don't see a need to have different music for each video. It's pretty unique to have music anyway, you are starting at the top of the class Mark.
You didn't really ask for suggestions on this but for my .02, I would like to know what the plan is for the video in the opening seconds. For example start by saying, today I will mix, stretch and shape 4 # of sweet roll dough. Knowing in advance makes it easier to focus on the details. Your close up shots of kneading are great, very descriptive. More close detail less wide shots. You must have a great art director/photographer!!

Do you do any slack dough breads? Your sticky buns? My sticky bun dough is a pretty loose dough, but I refrigerate it to make it easier to work with and roll out. I'll make a video on the sticky bun process in the future.

The song is 'Ricky's Theme' from the 'Ill Communication' album. I didn't think 'Fight For Your Right To Party' would work as well. Apparantly your husband has good taste in music and you do also (albeit subconciously). We'll see what happens in the next kneading and folding video, I'm going to re-shoot it tomorrow with Hamelman's multigrain dough, and I'll try to take into account everyone's very insightful suggestions.
Perhaps "Fight for your right" should be your next theme song....... ;D
I look forward to seeing the new version. I am just mad about bread.....dough, kneading, finished product......Its an illness. I am working on getting fixed...but I think its contagious. ;)

Happy to hear that you found the videos helpful. Some more videos are in the future for croissants and probably sourdoughs. Plus I'm thinking of a 'start to finish' type video for bread beginners, as I've received some great questions for issues that I've overlooked in the current video clips.
