Bosch Universal Plus Mixer

I am very sorry to hear about the new Bosch Mixer! I have the second gen original Bosch. It mixes any amount I desire when I use the scraper attachment. That problem does concern me though as parts for my Bosch are getting more and more difficult to find.

As far as introduction, I made all my family's bread by hand for years when my husband bought me my Bosch. That was over 30 years ago. I have run a bakery from my home with this machine as well as making all my baked goods with it. I have had to replace a few things over the years, but it is still a work horse. It is getting a little long in the tooth but still makes everything from 2 beaten egg whites, to Artisian bread in both small and large batches.

Our 23  year-old daughter is now using it to make all types of desserts for a group to which she belongs. She is on the first few recipes of a British challenge dessert show. Her friends are anxious each week to see how her version turns out.

Looking forward to being part of this group.

new member here after trying for 2 days to find the secret code :), finally found floydm's  e mail address and things are slick as butter :)

I am a retired professional now ,having time and will to take up baking bread for meself- again. I am an immigrant to the Us,used to eat bread,rolls you name it in my youth up to age 27.Deplored the usual bread here in the US for years,it just keep the fingers clean when one eats whats in the middle ,no taste.Used to bake bread oh 30 y ago with a simple ' bread machine' which  tasted better but still wastn what I was looking for

Changed  the wheat grain and things fell apart,in retrospect I didnt know that wheat is not the same,dependant on where and when one gets the grain.

So now I bought a BOSCH mixer as the literature states its the best , after burning out the plastic gears of a Kitchenaid :) ,well living is learning.bought more bread baking books as well reading various recipes from the internet.All of sudden it becomes complicated.Happy that a Dutch oven allows bread baking at home without a professional oven-big problem solved.

Now i am intimidated by the apparent fact that 'real'bread bakers prepare their bread dough by hand-learn the science of kneading - when I just invested in a Bosch bread dough maker !:)

so I am trying to get here possible answers  that allow  usage of this machine instead of kneading and coming up with an almost :) equal product.

@nd problem: learned that european breads require european wheat which are quiet different to North american wheat grains-allegedly.So bought a sac of gluten and hope to find the right mixture of american wheat and rye grain flours + gluten to yield the desired product-bread,rolls of my younger years.Missed the product without ever appreciating it when it was available!

but I am a chemist used to failure and experimental work- so hopefully  will come up with somwthing
