Kaixo and Hello!

Egun on! Good morning from Oregon, I am new to this site after lurking for a few years. I have been artisan home baking for 5 years, I am Basque and bake many breads and pastries from Basque culture-I also do a lot of Sicilian, Italian and French cultural breads. As an anthropologist I am very interested in the science of bread and have studied the origins of bread extensively, I am always looking to gain additional knowledge of traditional bread techniques. I will soon be posting some photos of my breads, I am looking for any critiques and information to make my loaves the most artisan they can be. I am pursuing owning my own bakery in the next 10 years so any advice and books are always appreciated.
