Temporary WF Brick Oven for Open Fire / No Oven Bread Challenge

The cover picture is the one where the top part of the oven, where the bread is baked, is closed off by a CI griddle allowing the bottom firebox to be open and another CI griddle to cover the top of the baking area.  The base is an old outdoor firepit.  The design lets us easily take the lid off the combo cool=ker when the steaming is done, allows us to controll the heat and holds as much heat as loose bricks can.

The top of the oven is covered in another CI griddle with a hole to regulate the heat to either close off the baking chamber to cool it off or let some air flow through it.  This cover comes off quickly so that hot coals can be loaded on top of the CI skillet the bread is baked in to provide heat from the top.  Coals can then be put on top of the Ci cover to provide heat to the top of the loaf when the combo cooker lid comes off.

The Combo Cooker fits tightly in the baking chamber bit the lid will come off easily.  There is just enough headroom from the top of the combo cooker to the covering griddle to put a layer of coals on top of the cooker.

There is an open grate from my 22" Weber charcoal grill that acts as the rack for the combo cooker to sit on making the bottom of the cooker in direct contact with the wood firebox below.  Since the firebox is always open we can keep loading more wood in as needed to keep the temperature just right.

We have a Plain Jane 123 SD bread to bake in this oven tomorrow.  The only bad thing is we had to tear down the top of the rocket stove to make this WFO.  No worries -  it will go back together very fast once this bake is done.  We shall see how well this oven works soon enough.

I am amazed at your ingenuity! I can't wait to see how your bread turns out. 

This is one challenge that I am bowing out of. This week is crazy for me and with the weather turning freezing cold (-30C with the windchill), there is no way I am attempting to bake anything outside. I am blaming skibum for sending the cold temperatures! As to coming up with something inside, I already baked Sunday and today and I will be baking again on Saturday so one more bake is not in the plans.

are just full of ingenuity or possibly something else:-)  I'm really looking forward to the challenge bake tomorrow when it will be about 72 F - just perfect for WFO baking on the cheap!  Skibum doesn't like the cold either.  It makes skiing a horrible chore and no fun at all.

Can't wait to see what everyone comes up with for this unusual bake.  We can all get a feel for what Job has to go though.....

I cannot express just how impressed and entertained by your innovation. L-O-V-E IT!!! I'm sooo looking forward to your 123 loaf baked in this contraption.

So far, all I have to show for this no oven bake challenge are English Muffins from last weekend. I think my challenge isn't so much not using an oven, but working the schedule around my schedule. I used our gas grill once when the oven glow plug unexpectedly went out, but it's a little too oven-like for this challenge.

were just for diesels when the weather got cold to help get them started,  Never knew there were diesel ovens too!  I think that would qualify for this bake come to think about it:-)  

We will have to think about how exactly to bake with this oven.  I have a laser for temperature readings.  I'm pretty sure that the top won't be baked boldly and the bottom will will be very toasty!  It is fun to make things with your hands even though it doesn't pay much:-)

Love the innovative "oven"!  Can't wait to see how this works out.  My only concern would be how you're going to manage grasping the handle on the top of the combo cooker given the close spacing and the fire coming up from beneath.  We have fireproof oven mitts??

from beneath.  I'm going to get a good bed of coals going by firing the oven for a couple of hours and then let it die down to coals so it doesn't smoke and cools down to baking temperatures.  I do have some mitts though.  I'm not planning on grabbing the handle either.  I'm grabbing the top on the sides and lifting it off - at least that is the plan.  I get enough burns with the kitchen oven when baking and don't need any more more!

You really have gone all out for this challenge, i can't wait to see how the loaf turns out. Who knows, this might become your method of choice when i comes to baking bread! LOL!

I will have gone completely crazy instead of mostly nuts!  I ahve always wanted to bake a loaf of traditional artisan style bread - no machines and baked in wood fired masony oven and thos is my shot at making a mess of it.  Im using wood harvested from the yard from trimming the trees so at least I didn't have to buy the wood.

You've gone to great lengths for this humble challenge! I'm so excited for your bake uncle! This is a real project and I cannot even fully comprehend it's parts and how it works because I am not one who will do big scientific projects for I always play by ear. Your architect schooling clearly shows and shines bright in this "makeshift" wood fired oven.

Maybe I should move the date to summer or spring months so our friends in the northern hemisphere won't be too cold outside? :D I just made something simple baked in my clay pot for this challenge and I still don't know what to call it. I baked it this morning and they're all gone by this time.

Maraming salamat po para dito dahil naramdaman ko pong may nagpapahalaga sa mga sinasabi ko at sa aking passion sa pagbe-bake! :D

post on baking over a fire with no oven indoors.  I told you I would get around to doing it one day and this challenge is what got me to finally do it.   I sized it so that it will take my sand clay pot too.  I couldn't decide which one to use first... the DO or the SCP.  You don't really need the bricks and griddles for baking in a DO over a fire - I've been doing that since the Boy Scouts some 55 years ago - Oh my!.  We made biscuits and corn bread mostly - but Lucy thought what harm could it be having bricks around the pot too and make it look mire like an oven.  Plus she is for anything to make me work hard..... especially something like moving and stacking bricks:-)  She is diabolical.

New we have a day to look at it and  see if we want to change it before trying it out.  It isn'lt quite level but it bothers Lucy more than it bother me:-)  It really wasn't much work.  It took about 15 minutes to find and round up the fire pit, grill grate, CI griddles and then it was just moving a few bricks a arranging them a couple of times till we liked it - maybe an hour total,  The wood is already cut and ready to go.

I am glad that the winter here is still 65-75 F every day though.  Doing this in the snow would be a chore I wouldn't do at any age.  Although....We did go camping and cooking in the wintertime in the Scouts with snow in the ground.and we didn't seem to mind.  Just shows how dumb you can be when you are young, ignorant and inexperienced!  The great thing is as you get older you forget everything and you get to do all the stupid, fun stuff all over again:-)

This is one of the better challenges and total fun so far...still the proof is in the baking!

Awesome!

Love what you and Lucy have come up with :).  I'm hoping to use my Weber charcoal grill this weekend or Monday as my wife will be baking cookies all weekend so it depends on time.
