I have heard about some of the stuff in the article, not all of it though. Personally, i do find sourdough easier to digest, its just not as "heavy" as regular bread. But for me, reason number one for eating sourdough is the TASTE! LOL!

I believe there are grains of truth (pun intended) in the article. I don't believe it is entirely accurate. Many of the benefit statements are generally correct. Perhaps the reasons why and the extrapolation to miracles is not.

Real science has validated the glycemic claim but perhaps not to the extreme described. My personal experience validates that sourdough based bread takes a long time before molding. In my kitchen, (which has hosted all manner of intentionally fermented foods), very little molding takes place. Most foods "spoil" by fermenting, including milk in a sealed jug! The critters are everywhere!

so take all these type of claims with a "grain" of salt.
