Mini oven. Help!

Hi! I'm a newbie in this baking industry. I just started my baking class yesterday and did my first dinner roll.

I want to practice making dinner rolls as I wait for my next baking class but the problem is I don't know what mini/electric/convection ovens to buy. We still don't have enough space for a gas oven so counter top oven is my target for the time being.

I've read some reviews online that you can't make sponge cakes using small convection ovens. Is it true? Please help. 

What are the things I should consider before buying countertop oven?

What is the best brand for it?

Any tips for using it?

I have a combi microwave oven which has an infra red grill which can also be used as a convection (fan) oven. I know people who make sponge cakes with the microwave only although I've not done it myself.

My little box only heats up to 220°C in fan oven mode however I have baked bread in it. It's not very big and everything has to fit on the turntable - I guess it might hold 6-8 dinner rolls.

Mines a UK specific model, but I'm sure they exist the world over. My only suggestion would be to get the biggest one that will fit...

I'm spending 6-8 months in Florida every year and really want to get a countertop oven suitable for bread baking (max temp 450-500) that won't burn either the top or bottom of the loaf due to element placement/lack of diffuser over the elements. The best model I have found is pretty pricey.

under Electrolux...  We have two mini's here, I bought the smaller one.  The larger Electrolux EOT38MBA would hold two pan loaves (38 litre) and here costs about $120 (w/o freight)  Also a 220-240V model.   Got any Electrician friends who would trade some fresh baked bread for setting up a special plug?  Make it red with a safety cover and don't stick any 110V appliances into it or they will burn out.

i have a Breville Smart Oven Pro.  I have baked bread, cookies, cakes, roasts and everything in between. It holds a 12 inch pizza, 9x9 and 9x13 pans.  I also have full size double ovens, but find I use this counter oven much more often.  I have had it a few years now, and just bought my daughter one as she loves it also.

I too have a Breville Smart Oven Pro but until recently had not used it for any bread. But with the hot weather and not wanting to always bake on the grill outdoors I decided it was time.

Once nice thing is they do sell a pizza stone that fits perfectly - so I got that.  Since then I have produced loaves I am very happy with. The oven is big enough to accommodate a good sized boule. It also does a good job of holding the heat and not heating up the house. Definitely does the job.
