fruit yeast water

I thought I would try different fruit in my yeast water for a change. My ayw is happily ensconced in the corner of the kitchen but I have an over abundance of limes and lemons in the garden.

So I fermented some limes and baked with the water today. The recipe was for texas toasting bread slightly amended by me. It produced a healthy strong dough and a great rise in the oven. The crumb is soft and has a slightly citrusy after taste. It was worth the experiment but unlike my ayw not something I would do aĺl the time.  Still it doesnt hurt to experiment.

Glad you found a use for some of your citrus. I bet that taste would be accentuated if you used a slightly sweet recipe.
