Question about Pretzels recipe

I am in the process of making sourdough pretzels.  I have mixed the dough, kneaded the dough, first rise, shaped them, and I put them into the rerig till next day.  My question is:  When I take them out of the refrig, do let them warm and rise, or start the process of baking them.

Well, that depends on your recipe timing, if they are fully proofed (which I guess they should be after a night of cold storage), you can bake them straight up, no further proofing required. The best way to test for proofing is usually the finger-press test, but it won't be reliable with cold dough, so you better judge by size.

If they look plump, airy and well risen when you take them out of the refrigerator then bake them straight away, if they seem not to have risen, then let them heat up on the counter until they do.
