Opening a bakery - equipment question! How do you know...

How many ovens you need require to purchase?

Of course there is the matter of how much space you have, and who you would be catering too (Mass production or just a neighbourhood bakery).

I am planning to open my own neighbourhood type bakery. I've been discussing what kinds of equipment/ovens I require... Then came the question.. How many?

Well.. I'm not sure! I assumed one large deck oven, conventional oven etc would suffice... Then I started questioning myself because obviously I'd be baking different artisan/eriched breads. 

 

Any advice ??? Thanks so much!

Do you have a business plan? How much bread do you intend to make? Are you making cookies? Pastries? You may need both convection and deck ovens. I guess my bigger concern is that if you don't know what type and size of oven you need are you really ready to open a bakery?  Have you worked in the baking industry? If you just need advice on brand of oven that's one thing but this seems like a very basic question and is something that you should know if you're opening a bakery.

Not trying to be rude but a lot of people sign up and post these kind of questions and as a baker it just seems like something you ought to know if you're opening a bakery.  Why would you open a bakery if you don't know the ins and outs of working in one and running one.

The basic business plan (number crunching) is essential, it may come very early to light that the whole thing makes little or no sense. Or perhaps it does make sense.

Do you already have a work space for the production, is it possible to wire 3 phase power? If not you will probably need to be looking at gas ovens. Electricity, water, health regulations, liability insurance, these are the things that have to come into the first phase of planning .
