Orange Infused Wholewheat Sourdough

A Challah style loaf containing 2 eggs, 2 egg yolks and 50g butter. I separated some of my rye starter and refreshed it with orange juice. Then added 2 tablespoons of orange zest to the dough. Left to rise overnight in the fridge again.  A nice loaf - fine crumb and great aroma.

Looks great. Sounds like a natural leavened pan de muerto. Just needs orange blossom water.

Looks great.  How much did the orange flavor come through?

The orange flavour came through very nicely. Stronger in the aroma than the taste. While it was baking, I thought I had overdone the oranze zest. But once it cooled down, it was just right. When I open the bread tin, I can smell it but the taste is subtle. Definitely there, but nice and subtle.
