Pie Parade

Our half pie / half crisp Apple New Year's Pie is made with a short crust bottom and a crisp top made with 1/3 C each almond granola, oats, sugar, flour and 4 T butter with some salt and pumpkin pie spices about 1/8th tsp each..

 

The inside has two different kinds of Honey Crisp and some Granny Smith apples.  How they get Honey Crisp apples to be so big and so small is beyond genetic engineering but they are by far the best apples for pie bar none.

Still we like to have at least two different kinds of apples in the filling along with some fresh lemon juice and 11 tap fresh minced ginger, 2/3 C total of white and brown sugar, 3/4 C total of snockered cranberries and raisins soaked in 2 T of bourbon and brandy with, 1 T corn starch and 1/8 tsp salt and pumpkin pie spices.

  

We par cook the filling to get the caramel going  and to get the apples pre softened since you cannot bake this at a high temperature or the crisp topping will burn.  It is baked at 375 F for 20 minutes, to set the bottom crust and then 30 minutes at 350 F trying not to burn the top but still get the middle bubbling through the topping at the edges.  This might be the best apple pie I have ever tasted.

The 2nd pie is our Saturday Pizza made with a double 12 hour preferments made from our cherry yeast water and a poolish with a pinch of yeast.   We used KA bread flour some slap and folds followed by stretch and folds where we incorporated the rosemary garlic and sun dried tomatoes into the dough.

After an hour on the bench to bulk ferment a final stretch and fold was done and the dough retarded for 6 hours  It warmed up on the counter for 2 and half hours before being formed into 2 large pizza pies.  The crust was brushed wih mojo de ajo before the red sauce went on, pepperoni, Mozzarella, 2 home made pork sausages, Italian and chorizo and 1 store bought chicken Italian sausage.

It was then topped of will yellow and red peppers crimini and button mushrooms, red and green onions, Parmesan and Pecorino cheeses.  Forgot the olives and fresh basil again.  The pies were baked at 550 F on a stone in Big Old Betsy.  This crust was very crisp, tasty and the pizza terrific.

Makes me wanna jump in my car and head west... That pie looks amazing and the pizza too and all the rest of the good stuff... I definitely need to go start an early supper after looking at that! I may have to even come up with a dessert! Good Job!

it a rainy day in Arizona and no sunset!  And boy did it rain on Saturday.  Set another record, not all time like we had 2 weeks ago but for that date.  We got about 2" of rain here in Gilbert and after the 5" we got the other week we had a year's worth of rain and then some - all in 3 weeks - and we really need it:-)

Yeah… you’re killin’ me with this apple pie.  Honeycrisps are pretty much the best apples ever, even without the pie, but this… and the topping… like a cobbler and a pie all at the same time… and snockered to boot!  I don’t think it gets better than this.  Brilliant!

The pies were all good.  When honey crisps go on sale ($1.47 a pound for the huge ones and only 98 cents for the small ones 0 they taste exactly the same)  you have to stock up.  Nothing like a good pizza.  The crust would have better with half of it being AP but Lucy couldn't find any - I though she had everything hidden away somewhere!.

the recipes but, even though she is a German Bread Baking Apprentice 2nd Class, she is pretty much all paws in the kitchen:-)  When you are retired,  all you have left to do is cooking, baking and dieting so we won't be giving any of  it up any time soon.  Glad you like the food and post ....

Apple pie has been on my list for a couple of weeks, now. This one looks wonderful. I don't often add raisins or cranberries, but intended to this time. but now I see both, and snockered, too! Oh, yes, we have a plan!

coming in in September and the price low, now is the time to make apple somethings, several times!  We make this one oven as pie, crisp of like this one- half and half.  Glad you like the post and got inspired to make something apple.  Same pie works well with nectarines and peaches in place of apples too.

are 2 of Lucy's 8 basic food groups along with; ice cream, chocolate, beer wine and spirits, pastries, cakes & cookies and  bread.  We just love pies of all kinds and sometimes scare unsuspecting people when we scream 'Pie!' in a crowd for no apparent  reason.   Try doing that one time and observe the reaction you get.   It is a totally different one if you have pieces of pie to had out to them after the scream:-)

Lucy sometimes makes things up to have a party, unlike last Sundays'  National Beer Drinking Day - all on a football Sunday.    She has some pretty strange friends  so.... it pays to have a concealed carry permit when these 'friends' of hers come over and are seriously mixing beer binge drinking with violent sports - all on government orders and approval.   What is the world coming too?    Thank goodness it is only one day a year and not nearly as bad as National Bourbon Shot and Chaser Drinking Day.

Glad you liked the post Phyllis.  Poor Lucy is too hung over to even start thinking about this Friday's bread bake but she keeps murmuring 'Italian' when her eyes aren't rolled back into her head.  poor thing.

Honeycrisp apples are my absolute favourite and I wouldn't have thought to put them in a pie..when I buy them I treasure them since they are so expensive. Do you have a recipe you can share so I am sure not to waste these wonderful apples!

apples are on sale at Sprouts for 98 cents a pound but you are so right, they are usually 3 times more expensive than any other apple.  So this is the week to chuck the cheap ones into pie!

I added some more details to the post as far as the recipe goes for the filling dn topping but didn't put one in for the short crust.  Everyone has their favorite but for single bottom crust like this one I use 1 1/2 C of AP flour, 1 T of sugar, 1/8 tsp salt, 1/2 stick of butter and 4 T of butter flavored Crisco cut into the flour and then add 4 T of ice cold vodka to just bring it together,  Refrigerate for half an hour - roll out and put in pie plate then refrigerate the pie plate for another half hour,  You want to cook the apples first before making the dough so that it has a chance to cool completely to room temperature before topping the cold bottom crust,,  I make the crisp last and keep it in the fridge so the cut in butter doesn't melt.

You will love this half pie and half crisp apple pie.  Happy baking.

I will be on the lookout for the honeycrisp.  I have a couple of weeks to our (Canadian) Thanksgiving and not everyone likes pumpkin pie - so this pie is on my 'to-do' list. Thanks so much for the edit with a few more details!

Am regretting the venison we're making for dinner as all I want now is pies... Not sure I'd even care in what order I ate these!   Husband ogling your post, had to wait 10minues for my machine back as he was glued to the screen.  Yum!

sounds terrific!  Can't say I've ever had one but would bet it would be fantastic.  Never had a bad pie of any kind.  Glad you and your hubby liked the pie post.  Pies really are our favorite thing to eat in the world.  Canl' wait to see your next bake
