Hi there. I haven't been here much since I stopped eating gluten a few years back. A year or so ago, it occurred to me that some of what I learned also applied to gluten-free bread. I was then able to produce a pretty decent loaf; using a g-f bread mix in a bread machine.
Lately I've decided to branch out & put a bit more thought into producing a good loaf without a mix.
I popped in today with one question, and stayed and read for an hour or more. I guess years away from an oven can't quite take the baker out of the woman. :)
