Hello fresh loaf community. I've just joined In hopes to further my understanding of bread and learn how to improve my baking. I'm currently in culinary school, and bread is quickly becoming a passion. Thanks for having me.

Or two.  Where are you studying in culinary school?  And what books are you studying baking, especially bread baking, from?

I study at Stratford Chefs School in Stratford Ontario. We used Hamelmans Bread and Mcgee's On Food and Cooking. I really enjoy reading Hamelman's book :)

You are in luck finding this site.  Many people bake breads using Hamelman's Bread.
