Following up on Wingnut's pizza post, here are a few shots of our pesto pizza from last night.
I used an overnight poolish for the crust, made the dough in the early AM and baked in the evening.
Pretty decent char on the crust for standard home oven.
is supposed to be Floyd! Nicely done. The Fresh Lofians are getting this pizza thing down pretty well don't you think? There is some killer pizza showing up on the site of late!

I have been wanting to try the Forkish pizza dough recipe which has been popular here, but can find no 00 flour in the stores. I may have to go cap in hand to some of the pizza places in town and beg a coupe of cups. My copy of FWSY has shipped and I am pretty stoked to try out some of these recipes which have shown so well on these pages!
Are there any viable subsitutes to Caputo 00, ie cutting bread flour with cake four??? Any suggestions appreciated!
