Very nice indeed.  Did you use a brotform style basket to proof them?  They look like they have indentations from something like that.  I would love to get baskets like that.

I've been working on getting a loaf for this for a long time. I did use the brot forms. They are pretty expensive (I had to think long and hard before spending $35 US for a basket) but they do make pretty bread.

Let me tell you abut the bricks and...

bowls of glue I've made in the past six months! This was the first try for this recipe but not for baking bread. The last two batches of bread I've made are Essential's Columbia from Gleser and this recipe from BBA. Both have been pretty successful. I've retarded both batches of dough in the refrigerator overnight. I'm wonder if this is what made the difference. The taste was delicious, the crumb pretty good but the crust was a little "chewier" than I'd like - don't know if this is typical of this type of bread or not - but thanks for the compliment!

Nice job..I'd like to encourage everyone to look for deals on brotforms. On Ebay, I got 3 new brotforms for less than $30, including shipping. SFBI also offers great deals on brotforms and bannetons, the proceeds going to their students

One went to the office...

where I work and it was gone by noon. My husband and I have pretty much demolished the second one - Oh drat! That means I'll have to bake again this week-end ...

I think the finish and color were a result of the malt in the recipe and the overngiht retarding in the fridge.

Your loaves look really nice.  It looks like you popped them right out of their brotforms with no trouble.  Isn't it exciting when it all turns out so well.  Good job!

Btw, I just wanted to reiterate what Paddyscake mentioned above about SFBI.  I got my linen-lined bannetons there plus some brotforms and various other things.  They have excellent service - friendly!  And great prices.
