Wholemeal "old dough"

Was wondering how long wholemeal old dough can last in the refridgerator, before being no good, and how much (%) is ideal? I tend to get away with up to 3 days with my white doughs... I do understand brown dough's ferment quicker.

Any advice would be appreciated :-)
