20120120 New Workflow. Wild Yeast Dill Rye with Sprouted Rye Berries

This bread was specially made for my kids' piano teacher, a German master pianist.  It was  also my first bread in many, many months.   I felt that a rye bread would be most appropriate for this occasion.

Thank you for your kind words. One of these days, hopefully in the near future, I'll experiment with some of the techniques you shared. There's much to learn from you.

Syd:

Thanks for your comments. 我最近擺了一個大烏龍。 I kept addressing a business associate, whose name is Sid, in our email correspondence by Ms. XXX, as I was thinking of you, the only Syd I know, and my mind had automatically labeled him as a 'she'! At one point, I guess he was 忍無可忍, 向我表白他的性別, 我以道歉圓場. 一笑.

:) Yippee, your story made me laugh.  But what if I told you that you 又擺了一個烏龍 ...因為我也是男生!!!  But I don't mind one bit because I get that all the time with my name.  :)

By the way, who is the swimmer?  Competitive swimming is my other favourite pastime.

All the best,

Syd

真是尷尬死了!又要道歉了! I'm so sorry! Now I know you are a 男生, that 姊妹 'feel' I once had for you is 蕩然無存了 ;-)

We host a meet annually and invite all the teams in our region (and across the country) to compete. The swimmer in the picture was from one of the visiting teams.  His shaved head had caught my eyes right from the get go and my lens had followed him around during the event. This is one of my favorite pictures of him. I'll show you another one in a bit.

How do you train for competition? Are you associated with any team and having regular workouts?

Ha! Ha! 沒有關係 Now it will just have to be a '姊弟' feeling ( if there is such a thing )!

I always practice on my own but compete with an out of town team because I haven't found anyone near my house to practice with.  Having said that, I have hardly been  in the water for the last six months for a host of reasons ( mainly work, but also ear infection ).

Best,

Syd

You know, Mini, there's a saying in the Koran:

"What you give is yours for good. What you keep is lost forever."

Thank you, for your comments, and everything you've taught me about rye.

Yippee,

What a beautiful loaf. I love the colors you captured in the crust and in the crumb.  Looks absolutely stunning!

What wonderful shots of your children.  Looks like quite an event!

Thanks also for the wonderful saying from the Koran.  I really like it :-)

Take Care,

It's nice to her from you. Thank you for your kind words.

It's been a long time, almost a year, I think, since we last communicated with each other. I believe I had committed to share something with you. If you don't remember that, then please disregard this dialogue. If you do, so to let you know, I haven't forgotten about that and I just haven't had a chance to revisit the topic. I promise you, if I have a definitive answer, you'll be the first to know. Take care.

Dear Yippee,
Thank you so much for remembering (I had forgotten); I so appreciate you keeping me in mind!
I just went back and found the post (now saved to my favorites), and was happy to see your stunning photos
still available to view.
What pleasure to go back and see that boule's incredibly beautiful crust...and to have seen this most recent post of yours, with this amazing rye loaf!
Thanks again,

your posts showed up as 'new' today for some reason.  This is another fantastic YW bread.  The crumb is just perfect and a good example of what YW can do.  Very exciting.  Love the use of malts, dill and buttermilk powder.  The roux really puts it over the top!  What a great idea. I too like soakers and especially sprouts in bread.  Am sure glad these posts popped up today.  Now we have more ideas for fine bread usin yeast water.  Thanks for posting your recipies.  Nice baking again.

Thank you for your kind words.  Sorry for the delay in replying your comment. I'm sure we'll have more discussion about YW down the road.
