starting a mother starter , last night , is it good to keep seal no air or let breath

Welcome Michael.

I'd suggest "loosely sealed" so it isn't drafty but it can still breathe a little, like in a jar with the lid not screwed down tight or a bowl covered with plastic wrap that is a little loose in a spot or two.

from a 'near neighbor' in Lake Worth, FL!

This is a great site.  Nice to know there is someone nearby baking at home.  But what about this HEAT!   As I type, I have a pizza on the stone on the gas grill because we juat can't take the heat in the house.
