Go figure, I wing it, and everything is going beautifully

Ok, this morning I saw the post that said Best ever machine bread - coconut banana. I thought it sounded intriguing and I had tons of leftovers that needed using and this seemed to fit the bill.

I don't know what got into me, but I just started kind of throwing things in. I slightly warmed up the buttermilk. I happen to know I had 2 cups as it was warmed in the measuring cup. I poured it in the machine, I then added the yeast and some white whole wheat and bread flour, mixed it all up. Added two eggs, an entire bag of coconut, some salt and then mashed up four bananas, threw those in and reaized this would be 3 loaves, so added a bit more yeast while it was still a batter. I let it soak a bit (so the coconut would absorb liquid and then I started the mixer and just kept adding a little whole wheat and then bread flour until it seemed it had a good texture. I let it sit a bit, to make sure the texture was right, I took it out, added a bunch of chopped nuts, let it rise for an hour, shaped it, put it in pans, let it rise an hour, then slashed it. YES I DID!!! For the first time ever, I was able to slash. Put it in the oven and almost immediately I started to see amazing oven spring.

So two things happened that have never happened before - I got a slash taht worked and I got oven spring. Now let's see the end result. and I measured almost nothing. I just worked with how it felt. Go figure!

ETA: I just checked on it and my slashes weren't big enough, and they aren't as amazing as so many I see, but the smell is AMAZING! I just turned down the oven temp to keep it from overbrowning before cooking through, but I cannot wait to taste this (and I don't even like walnuts!)

It's fantastic. I'm trying to post pictures but my darn iphoto isn't cooperating with photobucket. This happened the other day too.
