Well, there may be a bit of a terminology problem, but you'd probably never want to "plaster" an oven. Stucco, adobe or mortar wash maybe, but not probably not plaster (which deteriorates with heat).
That said, you probably don't really need any exterior coating if you don't want one. Especially if it's already under roof. It's usual purpose is to make the oven look nice and to protect the insulation if you've installed it. But, to really give you a good answer, we'd need more info on how the oven is constructed, location, etc. For example, if there's any chance of the oven getting wet from rain or snow while it's hot, the thermal shock may crack the masonry. Also, I assume from your question that you don't really have any insulation installed, so you basically have a pizza oven, i.e., one that is not meant to bake with retained heat, but cook with the fire burning in the oven. If that's not so, then yes, you would need some sort of outer coating -- to potect the insulation you need to install.
Is this an adobe or earthen oven? I just built mine a few months ago and Kiko Denzer refers to the last layer of adobe with fine cut straw as plaster. Is this what you are referring to?
I just finished a brick oven with 7" brick mass (two layers, 1 @ 4.5", 2 @ 2.5"), surrounded by one layer of 3" mineral wool then 1" ceramic blanket. This is an indoor oven for small commercial operation (3' * 4"). So to seal in the oven I put a layer of vermicrete from 1-2" all around and then covered that, to protect the somewhat fragile vermicrete, with 1/2" or so of stucco (premix mortar cement).
Today I have my first big firing. Internal heat was above 1000 for a little while, by time raked out coals etc more like 750 at the top and 600 at the bottom, and the stucco on top of the oven is still only at room temperature so I'm not worried about the temperature issue because it's on top of all the insulation materials including the last layer of vermicrete.
Seems to have worked well in any case, though too soon to say since this is only Day 1 operation-wise.
