Chicago Hard Rolls

Does anyone have a recipe for "Chicago Hard Rolls" - the kind you would be glad to put Panetti's Italian beef on? (if you know about the South Side and Roseland in the 50's you understand)  I have a recipe for authentic Chicago Italian beef, but I just have not been able to make a Chicago hard roll that makes the grade.

Make them without the onions for plain rolls.

The Kaiser rolls in Peter Reinhart's Bread Baker's Apprentice are great hard rolls also.

Sorry I can't help you with the recipe you're looking for. But i must admit the fact that you have a recipe for Chicago beef intrigues me a lot! I saw this made on the travel channel and would love to make it home in RI? Please consider posting it or sending it directly>I'd be very greatful! Thanks,Steve

Lucky you!!!you know what Italian beef is, gotta be from chicago....Oh yes Roseland...In my high scool days, we would go to the Polish Home every Saturday for anyones wedding in Roseland...Free under age drinking...Hoya, Hoya....Maryann baking used to supply the rolls...They buried that Greek Long ago...If you still live in the Midwest there are several good Italian beef places....Zorrba
