It's my colleague's birthday this weekend and we agreed in the office that someone should bake a cake for her today. I volunteered, but as I got home I felt like doing something else than the traditional chocolate cake with frosting. So I flicked through my recipe collection and found something totally unexpected - panforte. I know this is more of a Christmas treat, but it combines such nice things: chocolate, nuts, honey, cinnamon, that I thought - why not give it a go. 

It was really easy to make, but as I went to bed the batter was still runny. My fear was that either the panforte would never set, or it would be rock hard. 

Fortunately, it turned out ok and my colleagues (along with the rest of the office) loved it! So now I highly recommend making panforte, instead of cake!
