hi there
I bake a traditional irish soda bread and sell it at local markets. I want to supply some local shops but need to improve the shelf life of the bread. any suggestions for a natural preservative

I have found you can replace 1/2 of your buttermilk with sour cream, it adds more moisture and the bread will stay fresh a day or two longer.

there are a couple of ways
try using yogurt instead of buttermilk
soak the brown flour in water for 12/24 hours before mixing
guar/zanthan gum powder (tiny amount)
if i could see your recipe i may have more ideas
