Can anyone who is currently using or has used the Cresci Art of Leavening Dough book please tell me if all of the formulas are for large scale baking . I am interested in the book after reading the table of contents on Amazon and seeing a couple of examples of the breads. Thanks in advance for any info on the book. Caroline

I have used book for a number of years while baking at several bakeries, Beautiful to look at, difficult to use in that formulas assume much baking experience, which may or may not work for all. I did find the translation and the writing so romantic, so very Italian. Would I buy the book again, no, yet I am glad to have it in my library.
