Information on difficulties with rye flour & marbles rye breads?

I have never had much success with Rye bread, and have no experience.  Can anyone suggest a good true to form marbled rye recipe?

Hi, Naomi.

I strongly suggest you get successful with a basic sour rye before getting all fancy shmancy with marbled rye.

Once you can make a sour rye bread you are happy with, you can make a pumpernickle. No problem. Then, its a matter of combining the two doughs. No problem.

So, if you search TFL for sour rye bread you will find lots of material - recipes and discussions - that should help you get going. You might also want to get (buy or borrow) one or two bread cookbooks  that have good discussions of rye bread baking. I suggest Greenstein's "Secrets of a Jewish Baker" and Hamelman's "Bread."

There are several members here who have a special fondness for rye bread baking, and at least one (retired) professional. So, you have lots of backup when you get to specific questions.

Does that sound like a plan?
