Lowering cholesterol

The Japanese milk bread recipe I use has 1 egg and 60 grams of butter per loaf. Are there any substitutes for egg yolk and butter that won't adversely affect the flavor and texture?

1 yolk per loaf is really insignificant for contributing to blood cholesterol but really contributes to the bread texture. If you really must eliminate it, increase the oil a bit and poss increase the liquid slightly- maybe a tablespoon or so.

There has been a lot of recent re-thinking of the dietary cholesterol association with heart disease.

They just couldn't explain why various populations around the world (Eskimo among them) that had extremely high intake levels also had some of the lowest rates of heart disease.

When they changed the association of heart disease to 'trans fats' consumption, everything fell in place. So much so, that the US Government has banned trans fats in all food produced in the country (being phased in over the next two years, I believe).

I'm not an expert by any means, I'm just passing along some things I've read for you to consider.

That egg might not be as bad for you as we had previously been led to believe.

My daughter's cholesterol level jumped since last year. She moved out of the dorm and now has to provide her own meals. As she is not at all interested in cooking, that means lots of eggs, about a dozen a week. Of course, she also eats more junk snacks such as Pepperidge Farms cake.

I understand your concern for your daughter's health. I think it is good that she is even aware that her cholesterol level has jumped (so many are not).

That being said, Pepperidge Farm cakes (and the like) are precisely where you will find 'trans-fats' (at least for the next two years in the US) in one's diet.

I honestly would suspect that the junk food (rather than the eggs) is the source of her jump in levels.

College is a tough row to hoe. So much freedom, so little money and never enough time.

You know, just my opinion, but 'it ain't the eggs, it's the Farm'.

I hope it works out.
