Wheat berries?

Trying something new with my bread. I am a huge fan of multigrain bread and I wanted to try to make it myself so I bought flax seeds, wheat berries, millet, sesame, sunflower, and pumpkin seeds. I have never used wheat berries before and I am wondering how to incorporate them into the bread. I have ground some of the berries into flour, but would like to use them whole in the bread along with the other grains and seeds. Don't want them to be mushy or jaw breakers!

You can either boil them in some hot water until they become soft, or pour some hot water over them and let them sit overnight and then incorporate in your formula.  You do want to make sure they are soft before using or you will have some expensive dental bills :).

If you precook wheat berries like long cooking rice, they'll be al dente in 35 minutes;  45 minutes for entirely cooked without falling apart.
