Osttiroler Combi Mills

Does anyone have any experience using an Osttiroler Kombi mill?

John Melquist from the Trukenbrod Bakery in Vermont has one; that he has been operating it for the last 12 years without even sharpening the stone... The best mill on the market, hands down

We milled some corn this weekend... just beautifull machine

Hi Dan

does the Trukenbrod Bakery have the sieve attachment or do they just grind whole meal? do they use the mill to make  bread flour?

John Melquist is one of the rare baker in the USA where he farm his own grain, wheat, spelt, rye etc, mill it fresh on his mill and make bread. So Yes he does have the attachement with 3 different chute for 3 different type of flour including the brand that comes out at the end. Their is endless possibilities on the sieves , you need to figure out which one you are interested in. I know that John sometimes can make high extraction wheat or even white" spelt" to do a miche( pretty expensive thing to do" but doable. Yes he makes bread flour but does not actually sell the flour, but rather use his for his own production.
