Bosch Universal Mixer Whipping Cream Cheese

Sooo, I really LOVE my Bosch Universal mixer - it does exactly what I bought it for when it comes to my bread mixing.

HOWEVER, last night I used the beaters for the first time to whip some cream cheese, and I was very disappointed how the beaters don't reach all the way down to the bottom of the bowl. I was making a "cheesecake" to use up a Graham Cracker pie crust I had bought by accident (don't ask), and even though I scraped down multiple times during the mixing process, there was still some cream cheese stuck to the bottom of the bowl when I emptied the mixture into the crust.

Is this something I need to live with (in other words, use my Kitchenaid for), or is there some sort of "fix" for it?

When I lived in Germany, I had the regular Bosch Mixer, and loved it, also the grain mill attachment. Unfortunately I couldn't import it to Maine, so I was quite enthusiastic when I saw the Bosch Universal Plus at my local kitchen shop. My Cuisinart was just about giving up its ghost, so I bought the Bosch to make my pre-doughs.

It was a disaster. Two more hydrated bread doughs (for 1 and 2 loaves) crawled right up into the opening to the engine, and it was a real pain in the butt to scrape the dough out of the mixer bowl with its middle column. And when I tried a smaller amount of batter, the beaters didn't reach far enough down, and I ended up using my handheld mixer.

With great disappointment I took the Bosch back the next day and got another Cuisinart.

Were you using the beaters, the wire whip, or the batter whip?

Maybe try leaving the cream cheese out to soften at room temperature and then try the wire whip.

Theres no way to change the offset from what I can see on mine.  You probably wouldn't want the beaters to be hitting your plastic bowl anyways with the torque the machine develops.

I was using the wire whip, on Cream Cheese that had set out on the counter for a while and was plenty soft.

Interesting, I'll be making a cheesecake in a few weeks for work.  I'll try using the beater paddles and let you know how it turns out.

Thanks, I actually saw that when I checked over at Pleasant Hill Grain the other day. However, it looks like that scraper only clears the sides of the bowl, not the bottom.
