How to Mix Butter and Oil
I have this recipe to make some cookies
1 EGG TO BRUSH TOP OF COOKIES
4 CUPS FLOUR
2 TSP BAKING POWDER
1 TBS CINAMON
1/2 CUP CORN OIL
1 CUP SUGAR
1/2 CUP ORANGE JUICE
1 TSP BAKING SODA
1 TBS VANILA
ORANGE RIND
2/3 CUP BUTTER
-------------------------------------------------------------------------------------
Bit the egg to have it ready to brush the top of each cookie
Mix the Baking Powder, Cinnamon, AND Flour
In medium speed bit the Oil with the Sugar
Mix the Soda in the Orange Juice
Add in the Mixer the Orange Juice
ADD THE VANILA AND ORANGE RIND
Add the Butter
Add the Flour and mix by hand
MIX the dough BY HANDS enough so you can manipulate it easy
Put the cookies in a greased pan in any shape you want.
Brush the top of each cookie with the egg and
bake at 350F until they get a gold color (about 35 minutes)
My question is how do you mix the butter with the oil? Unless the butter is heated the mix will be full of butter chunks I guess?
Thanks
Where it says to beat the oil with the sugar...I would cream the butter with the sugar, then add the oil and carry on from there. Most cookie recipes have the sugar and fats creamed first, then eggs, then dry.
Sound a good idea, perhaps will give it a try
Thanks
