
After Moe posted about a recent take on simple sourdough I got to looking through Susan's posts experimenting around with her simple sourdough approach. Her seeded doughs sure looked good. I thought I'd tweak my version of the simple formula to add in a few seeds. It turned out pretty tasty with some added nuttiness from the seeds.

Crumb turned out a bit blurry but I'm sure you'll get the point.
Soaker:
25 g sesame seeds
25 g flax seeds
75 g hot water
Dough:
100 g 1:1 starter
300 g water
325 g bread flour
75 g whole wheat flour
75 g rye flour
9 g salt
baked in a dutch oven combo cooker - 450 F with lid on for 20 minutes, 425 with lid off ~20 minutes

Susan was my go to for almost everything when I first started SD baking. Her blog and the weekly postings that she featured were always completely fool proof.
I still make her bagels they are the best ever.
