I bake a 100% sourdough spelt loaf every week and mill my own flour with a Mockmill. The loaves turn out well, but lately I have noticed the flour does not have that rich, nutty flavor I usually associate with spelt.
I have tried spelt berries from three different suppliers, but they all taste about the same. Has anyone else run into this issue?
