I am attempting to calculate Carbohydrates in my bread (per weighted slices)
I only use king Arthur flour or freshly milled flour. My recipe is strictly flour, water, salt, and starter.
Based on the above information how many carbohydrates would be in a 50 gram slice?
Just use the nutritional values on the flour packet. If home milled, then use comparable products of either white or whole-wheat.
Fermentation will barely affect the inherent energy from the flour.
Applying this to a loaf, do the math(s)! You will know how much flour you used for the loaf, from the weight you can calculate what is flour, the rest is water and salt depending on your ingredients.
Essentially, just work out how much flour there is in your slice of bread and then use typical nutritional values.
PS. Nutritional values, such as calories aren't the full picture, so bear that in mind. Not all energy is absorbed..

30g KA bread flour contains 23g carbs. This is accurate, the rest of the numbers I just plugged in.
Total amount of flour in loaf: 400g
Total amount carbs in loaf: 400 x 23/30 = 306g
Weight of baked loaf: 590g
Carbs in 50g slice: 306/590 x 50 = 26g
AI told me 25-27g in 50g slice using your info, so looks right.

As long as your bread stays simple, the calculations posted will be all you need.
If your bread uses extra ingredients (sugars, fats, seeds, etc.) then you'll need something with more power. I use the free Cronometer app to calculate nutritional info. It links to USDA/FDA, some international, and user-derived databases. I enter all the ingredients except water for a recipe. Then I calculate the number of servings based on the size of the loaf. For example, if the final loaf is 500 g, then the recipe made 10 50-g servings. I'll then enter 10 in the number of servings. I'm mostly interested in calories, fiber, added sugars, and sodium in my breads; most of them contain varying amounts of the aforementioned extra ingredients.

My Vermont sourdough has 33.5 g net carbs and 738 kJ for a 50 g slice. I had to work it out so I can calculate my daily net carbs to manage my blood sugar levels. My Vermont sourdough is 90% bread flour and 10% stone milled whole wheat. My typical slice is 28 g - 18.7 carbs and 413 kJ.
