
Math isn’t my long suit . I have an incredibly HIGH PFF because of my less than stellar skills lol.
I milled Marquise and Stardust from Barton Springs Mill. The PFF is all Arrowhead AP.
460g Milled Marquise and Stardust
160g H2O
13g salt
150g Trinity- Homemade Yogurt, Date Nectar and EVOO
640g 100% hydration levain !
Mixed, folds and in a rare to me anymore move I bulk retarded due to time constraints. It tripled overnight in the fridge.I poured it out folded into a log while cold and placed in buttered Pullman. Set pan into my “ precision thermal controlled bread riser/ yogurt maker”. Went out to do several hours of weeding and spreading 3 yrds of mulch . Came in and baked top on. It’s so fragrant and filled the pan.
The bowl is by D. Goines 1992 Box Elder.
