Discussion: I commented on a posting by Lyn (ll4330) by providing a recipe for vegan and no-sugar banana bread generated by ChatGPT and I thought I'd give it a try. I have to say that I do like this bread, it's not sugary sweet like regular banana bread but has a more nuanced sweetness from the bananas and notes of vanilla and cinnamon. The crust was nice and firm and the crumb was tender but firm and moist. The bananas I used were not super ripe so I baked them skin-on in the oven @ 300° F/148.9° C for 20 mins. 5 bananas got me the 754g required for the recipe. The split banana used for garnish was not prebaked.
Make again? - Yes.
Changes/Recommendations:
- I would double the TDW for the pans I used.
- More spices such as nutmeg.
- Maybe vary the type of nuts and add dried fruits.
