I have made bread and pancakes with einkorn, no problem although when making crackers with the flour it is very sticky when rolling and it just rolls a loop around the rolling pin. I try to gently peel off the pin or use a butter knife to scape as rolling and it is a struggle. I have coated the rolling pin with white flour and sprinkled the same in the mix and that helps slightly although still a pain. Any ideas or maybe mix 50/50 with another whole grain?
Random thoughts: coat the dough with seeds (sesame, flax, chia, sunflower, etc.), handle with water instead of flour, coat surfaces with oil instead of flour. Not sure whether any of these will make things better since I have nearly zero experience with einkorn. Maybe rice flour or rye flour would release easier than wheat flour?

Use less water. Crackers are generally low moisture. Play with it and you'll get it. Enjoy!
Don't overwork einkorn. The more you work einkorn the stickier it gets.
