Update on Apple Yeast Water

I wanted to give a progress report on my AYW . I went away on Aug 20th back home Sept 2 . I stored it without any fruit but didn’t add any lemon juice as it had some in it already . When I got home I added 1/2 chopped apple and set it in the microwave with light on. I came back in a couple hours and it was really fizzing gently and smelled so fragrant . I was quite pleasantly surprised. 

I’m now keeping it in a pint glass jar . I took out 100 grams to bake with and  added more water but still no lemon. The fruit was still so new so I refrigerated it for a couple days then removed it. 

Now today 9/23  I took out the YW and it was very clear I added 1/2 chopped apple no lemon placed in the microwave and left it a couple hrs. Just checked and wow it’s fizzing gently and a sweet apple fragrance. I’m baking with it tomorrow. 

I’m going to leave it at room temp overnight and take out 100 grams and toss the apple chunks and store it without fruit. I’m not sure but I think I will put 1/2 tsp lemon juice just because it’s got to be so dilute by now . 

I think the main piece of important information to take from this is that storage without fruit is the way to keep a fresh YW going and it allows for a quick refresh. 

Not very scientific I know but I do pretty much all my baking and cooking by instinct and observation. Hope this helps .

I checked on the AWY at midnight. Was very fizzy but apples were starting to discolor and the fragrance was changing to a slight sour. Set it in a cool place on countertop and this morning made some changes. I took out 130g for my Porridge Bread and then added new filtered water and a 1/2 tsp pure lemon juice. I’m going to remove the apples and place the jar in the fridge til next week . I’ll keep an eye on it and make adjustments as needed. It’s not all that fragile a process and doesn’t require a lot of measurements etc… pH etc… at least I’m not up for all that 😳🤣. Will post again in a week. c
