Starter is ready. I AM NOT READY TO BAKE!!
While it is not quite there yet, I'm confident my starter may be ready in the next day or two.
PROBLEM: I'm leaving home for an overnight tomorrow.
Ideally, if my starter is ready before I leave, then I could feed it and put it in the fridge, right?
If it isn't ready, I guess it's coming with me [along with the flour, distilled water, scales, and jars]. If it peaks while I'm away and am coming back home the same day it peaks?? Feed and keep at room/car temp until I get home?
Thanks again for all your support
Yes, put in the fridge. It will continue to develop there, but more slowly. If it's just a night, you will probably be able to bake with it without even refreshing.

If it's young it'll develope more - and that's what you want. If you feel like it - give it another feed before you leave - I wouldn't (both take it and feed it). Enjoy!
Feed and allow to double before refrigeration. Build up a good colony of yeast before refrigeration. I find it fares better ad is stronger than when put straight into the fridge. It bounces back quicker.
