Just wanted to share an "oops"

I left my starter in the fridge intending to bake with it, two weeks ago (maybe longer? I'm not sure). So today, I went, why not just feed all of it then bake something? So I dumped my starter into a bowl, 300g. So now I have 900g of starter because I was intending to bake two loaves of bread last time and forgot I had already fed my starter for it. Welp, I usually only build for a specific recipe because I hate throwing starter out, so I guess I'm on the hook now for at least 2 beer breads and some pizza sticks this weekend. Maybe even some sourdough waffles. My husband is finally starting to think it might be a good idea for me to see if I have ADD (our son has it). I think I'll start using my dry erase board as my "To-Bake" list from now on. I also think I'll have to make sure I don't start a project without coffee, as it never seems to get finished. Ha ha!

I know I can dry the starter, but I already of have about 250g in another jar for next week and I really want to use up all 900g this weekend.

Anyone ever just add it to banana muffins? I'm not sure how much to add.

I use the King Arthur waffle recipe and double it! It makes a huge amount of waffles which I undercook slightly and freeze in parchment paper and plastic bags and we have toaster waffles for weeks. They are as good as new. Here’s tons of ideas linked below. https://www.google.com/search?q=sourdough+discard+recipes&rlz=1CDGOYI_enUS676US676&oq=sourdough+discard&aqs=chrome.0.0i131i433i512l2j0i433i512j0i512l2j0i131i433i512.8481j1j7&hl=en-US&sourceid=chrome-mobile&ie=UTF-8

I need to make a batch of Perfect Loaf waffles. They do contain a lot of butter, but they are very good.

The pancakes are an even better way to use up starter, since they call for more. They are delicious too:

Nice! I'll look into that waffle recipe. I currently have two "1,2,3" sourdough beer loaves resting in a bowl. Next will be some pizza shells I can par bake to freeze. I usually don't bake bread more than a twice a month and underestimated how much I had. Thankfully my son's teachers are looking forward to the extras.

I'll check out the King Arthur waffle recipe. I found a pizza dough discard recipe from Mike Avery's website I'm going to try too. I figure I'll make a few small pizza shells tomorrow to either parbake for freezing or just eat for dinner. I've got some beer bread resting in another bowl as my starter has taken up my usual mixing bowl.

Here's Mike's pizza recipe: https://www.sourdoughhome.com/sourdough-pizza-made-with-discarded-starter/ I've never made pizza outside of buying pre-made dough from the grocery store. But if all else fails, I'll just make bread sticks.
