Sourdough english muffins-first attempt!

I used King Arthur's recipe here, and they turned out pretty decent I think! They were a tad undercooked inside, and I don't have one of those metal rings to help shape them, so I just free-formed it. But even though they were kind of oblong, they were super delicious! I have sliced and frozen a bunch too and am excited to be able to pull them out of the freezer, so much tastier than those from the grocery store. If anyone has any other sourdough english muffin recipes they have tried and like, I'd be keen to hear ;)

About time I tried a comment here after several years of following this blog on an old fashioned feedreader. Extremely helpful it has been too so as it's my first, thanks to all the contributors for sharing their knowledge and experience. Since you asked, and coincidentally, I also made a first attempt at English sourdough muffins just 3 weeks ago. After some research, I settled on Little Spoon Farms's recipe, coz I liked the look of 'em. Like you, I was quite happy with the results, though I do have English crumpet rings to cut them with, which probably helps with the shape. Pretty well followed the recipe and instructions, though I don't have AP flour here and mixed something like 75% bread flour with 25% cake flour to create an AP substitute. Not sure whether that works chemically, I'll defintiely be making them again, though I'll probably try with 100% bread flour next time.

Construktion are those yours or the pic from the recipe book? They look very professional.

you can use an empty can or glass to cut the dough.  I have an electric skillet with a cover which cooks them perfectly.  If you are using a cast iron pan I would cover it up to create some steam.

They were made without rings. Turned out very nice.

My favorite English muffin recipe is txfarmer’s. I would recommend rings for those though because the dough is very soft.

It’s been a while since you posted this, but I just made a batch of my fave sourdough English muffins today. The recipe is at my very ancient TFL blog here. It’s an overnight recipe and just always turns out so perfect!
