Happy Canada Day
Hi TFL, just wanted to wish you all a Happy Canada Day. We in Canada have a long weekend so I am looking forward to seeing everyone’s Canada Day bakes this weekend. I’ve already posted my bakes in my blogs but let’s see yours.

What is the purpose of this holiday up north? A National Baking Day? We are celebrating an Independence Day on Monday in the US so it is a holiday weekend for us as well. Cheers!
It should be a national baking day, but alas it is not. According to Wikipedia “ Canada Day (French: Fête du Canada), formerly known as Dominion Day(French: Fête du Dominion), is the national day of Canada. A federal statutory holiday, it celebrates the anniversary of Canadian Confederation which occurred on July 1, 1867, with the passing of the British North America Act, 1867 where the three separate colonies of the United Canadas, Nova Scotia, and New Brunswick were united into a single Dominion within the British Empire called Canada.[1][2] Originally called Dominion Day (French: Le Jour de la Confédération), the holiday was renamed in 1982, the same year that the Canadian Constitution was patriated by the Canada Act 1982.[3] Canada Day celebrations take place throughout the country, as well as in various locations around the world attended by Canadians living abroad.[4]”

It rained in Vancouver today so I stayed in and baked. I made a buttermilk bread and pizza.

Looks like rain here in Austria, at least on the north side of the Alps. Cooling down so a good time to bake. Baked a recycle rye on Saturday in my mini oven outside because of the heat.
Bought half a walnut rye bread at the farmer's market Friday and after tasting a slice of the hard blah blah thing, decided it needed a strive for independence. So I poured boiling water over the remaining slices added some bread spice to sit overnight in the company of a rye levain. That way the sourdough starter could encourage and inspire that sorry little walnut bread to become a new country loaf. :)
Saturday morning I mashed up the wet bread, tossed in the tripled rye levain, 250g wheat bread flour, 50g rye flour and 5g salt, a bit of orange marmalade and a bit of water to make a dough resembling 80% hydration rye paste. Very pleased with the result. I'd say the 50/50 recycle was a successful "brick." (Might reduce the hydration a wee bit with the next revolution.) Fresh raspberry jam & coffee pairs well with it.
What's in the Pie? Like the artsy thick-thin weave effect.

The pie is a sour cherry and rhubarb pie. The rhubarb is from a friend who we were visiting this weekend so I baked the pie for our visit. I have to say that sour cherry rhubarb is an outstanding fruit combination for pie and I’ll be using more of my stash of rhubarb for it in the next year.
