I want to buy a batard banneton. I have an 8-9" boule banneton. What is the equivalent?
Should I buy the 10" batard banneton or a larger size? It seems to me that a 10" batard banneton might be a little small. I just want the equivalent size batard banneton to my 8-9" boule banneton. Thank you!
And weight. Volume is area. Or length x width x height
What is the type and weight of the dough you want to use?
I have two bannetons in front of me...top inside dementions. 8.75" diameter 3" deep. Oval 9.5" x 5.5" x 4.5"
(So who's the clever loafer who can figure out the area of both?)
Because of the tapered sides it may be easier to just take a plastic bag or the basket liner and fill it with rice to the familiar starting volume of your proof and tie up the bag. Then set it into the other banneton to see how much room it takes up. Or how about shaping the bag into an oval and take measurements to see how big a banneton you need.
My 10" oval bannetons hold 900 grams of mostly WBF dough and allow for about 20% final rise without overflowing before retarding.
Or did I misunderstand the question?
Best wishes. Dave
