Just like me!

Pasta Madre, discard Sfinzi. 

I refined this into an actual formula of sorts. 



1. 140 grams of pasta madre discard

I used, Alans Levien calculator to bring the 50% hydration mother dough up to 64% hydration, at 400 grams total.

The 400-gram dough ball was scaled into 4, 100 gram balls. The rest is history!
