The next feeding will be a full 24hrs. from now.
T-plus 90 minutes since the last feeding. (Very strong alcohol odor) Kept at a constant 78F. I have to say my girl is just about as pretty as a picture! I think I am falling in love!

Start the intensive feeding regiment of the mother dough, before the bake.
Source the wooden shishkabob sticks. I wonder, would steel ones work? I think I may have some of them.
Source / make any other ingredient I need. ie, candied orange peel

I am a little concerned, when I cut 20 grams out of the center, I did not observe many air holes. Onward and forward.

I think maybe 3grams of honey at only 20 grams of pasta is killing her! Next feeding I will skip the honey altogether, Thanks for your input, I respect your opinion 100%. It is not written in stone that I have to start the bake this weekend. Even NASA postpones missions if everything is not just so. Michael, I would be very grateful if you find the time to stop in and give me some feedback. Thanks for your help.
Very much like most other beautiful women I have had the pleasure to know in my life, Ms. Valentina Bria is proving to be very high maintenance. With MWilsons, confirmation that something is amiss, I have decided to postpone the panettone bake until I can get the Pasta Madre, mature and, sorted out. The new tentative bake-off, New Years' weekend 2021. These things should not be rushed, otherwise, failure is guaranteed before the first stretch and folds ever take place.

I skipped last night's 8:00 PM feeding. I reverted back to a twelve-hour feeding schedule, for the time being. I am encouraged by the 12hr. fermentation. Have a look.

The 12/19/20 4:00 PM feeding was uneventful and disappointing. The amount of fermentation was less than the feeding before. After the refresh and eight hrs, the pasta looks very active again? I am ready to pack it in and fortify my Panattoni with CY.
