Still testing but it seems to boil down to steam accumulation and retention in home ovens! :)

work of art.  The time learning, as frustrating as it may have been, was well spent.  Piece by piece, you've unlocked the "secrets" to this type of bread.  I hope that you were paying attention to the recent and seemingly forever Community Bake, because all of the element to succeed had been visited on those pages time and again.

There are a fair number of baguette bakers on TFL who would kill to get the ears and grigne that you achieved.  Don't stop now!  And with any of these, bakes  you can still piggyback onto the Community Bake for baguettes and add a post to it.

74% hydration seems way more realistic than what you first mentioned.

Wow, I have to agree with Alan, that is a gorgeous baguette.  Wonderful ears and grigne, looks perfect and I love the pointy ends.

Steam eluded me for so long...! I'm now a firm believer in steam! (I did try the ice cubes, the sprayer, the industrial garden's sprayer..  non worked!!!)

  On    This   Year's   Christmas   List : GET  YOURSELF BETTER STEAM IN THE OVEN!!!!

Beautiful again, yes steam is super important when baking hearth loaves including baguettes.
