Starting a new culture.

    It's  been years since I had one and today I started a new sourdough. 2 T apf, 2 T warm water with juniper berries. I soaked the berries for about 1/2 hour, then mixed in the flour. It's in a 1/2 gallon glass jar. Wish me luck! Tomorrow,  it'll  be fed the apf and warm water with a small pinch of palm sugar.

wow, that's positive thinking...but it might be too big.  I tend to use much smaller containers.

Don't feed until it shows activity, just stir often. It should go quick, I've done more than a few using berries from the backyard. Beware though - yeast tends to populate first, then lab, opposite of the normal chain of events. Enjoy!
